Simple Slow-Cooker Chili Recipe for Fall

One of the things I love about cooler weather is the return of hot and hearty meals. This slow-cooker chili is a recipe I’ve been using and adapting since I first started cooking for myself, and it never disappoints. We enjoy it at home at least once or twice a month. It’s also my favorite go-to when I’m delivering a meal to another family, because it makes a big batch and freezes well. It’s easy to whip up, easy to modify based on your family’s taste, and best of all, my kids will actually eat it.

Ingredients

  • 1 15.5 oz. can kidney beans
  • 1 15.5 oz. can great northern beans
  • 1 15.5 oz. can pinto beans
  • 1 15.5 oz. can black beans
  • 1 15.25 oz. can whole kernel corn
  • 1 4 oz. can mushrooms (pieces and stems)
  • 4 oz. diced green chile (canned, frozen or fresh roasted, select heat level based on your family’s preference)
  • 1 28 oz. can petite diced tomatoes
  • 1 14.5 oz. can petite diced tomatoes
  • 1 10 oz. can Rotel (again, select mild, original or hot based on your family’s preference)
  • 1/2 yellow onion, diced
  • 1 lb. ground beef or turkey
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Directions

Open all your canned goods, and drain beans, corn, mushrooms, and chile (do not drain tomatoes.) Add all canned goods to the pot, along with your onion. Crumble ground beef (or turkey) into the bean/veggie mixture, and sprinkle spices on top. Give it a good mix, cover, and cook on low 8-10 hours or high 4-5 hours. Serve with some shredded cheese or a dollop of sour cream on top, and a side of cornbread or tortillas!

I know, I know – The ingredient list is kinda long. But: a lot of it can be found in the canned goods aisle, and there’s a good chance you already have all the spices at home. So it won’t have you running all over the grocery store trying to find what you need! When it comes time to put this dish into the slow-cooker, get your kids involved! My 4-year-old daughter loves to help with this dish. She has become a pro at emptying the canned goods into the pot, adding the spices, and helping to mix it all up.
