Three Quick & Delicious Plant-Based Dinner Ideas

I know we are all about to rip out hair searching for dinner ideas. But you are in luck!

I have three recipes for you that require less than ten ingredients and take no time at all to make! They are healthy, plant-based, and kid-friendly of course.

vegan meals

Vegan Burritos

1 pack of whole wheat tortillas

1 can of black beans, drained and rinsed

1 can of corn

1 red bell pepper, chopped into corn sized pieces

2 avocados, peeled and mashed

1 tsp of chile powder

1/2 tsp of cumin

1/2 tsp of garlic salt

1 tbs of olive oil

In a large frying pan add the beans, bell pepper, and corn. Coat with the olive oil and cook on medium high heat for about 7 minutes. Add in spices and mix well. Continue cooking for another 4 minutes. Warm the tortillas. Top with mixture and avocado. Chipotle who?


Quinoa Salad

2 cups of cooked quinoa

1 can of drained and rinsed garbanzo beans

1 cup of diced cherry tomatoes

1 cup of chopped cucumber

1 cup of baby spinach

1/2 cup of chopped red onion

1 tbs of olive oil

1/2 tsp of garlic salt

1/2 of black pepper

Mix all of the ingredients into a large bowl. Chill for one hour. Serve and enjoy. That’s it!


Tofu and Veggie Bake

Ingredients :

1 pack of extra firm tofu, drained and diced into 1″ cubes

2 cups diced red potatoes

2 cups of chopped broccoli

2 chopped bell peppers

1/4 cup balsamic vinegar

1/2 tsp garlic salt

1/2 teaspoon pepper

2 tbs of olive oil

Preheat the oven to 425º F. Toss all of the ingredients in a large mixing bowl. Make sure everything is completely coated with oil and vinegar. Spread onto a large sheet pan and throw in the oven for 30 minutes. Flip halfway through. Cook until potatoes are tender. Simple, but amazing.
