Sweet Rice :: It’s What’s for Breakfast!

One of my favorite memories as a kid was when my dad would make me his favorite dessert–Sweet Rice. When my dad could no longer make it, my mom made it. It was simple, sweet, and warm. Now as a parent, I get to share it with my family. I especially like to make it for an easy, hearty breakfast. Now that I’m grown up, I’ve doctored the recipe a bit to make it just how I like it. It is just as simple, sweet, and warm as I remember it.

Although my dad is no longer living, I cherish this recipe, and I cherish those little moments that later became big moments.

Joe's Sweet Rice RecipeJoe’s Sweet Rice

Ingredients:

1-1 1/2 C Jasmine Rice

1 C Water

3/4 C Milk (I use Lactose-Free or Almond Milk)

1 tsp Vanilla extract

1/2 tsp Almond extract

1/4 tsp Cinnamon

1/2 C Raisins or other dry fruits of your choice (optional)

Directions:

Set rice to boil. Once it comes to a boil, turn heat down and let simmer. When rice is close to being done, add extra milk and sugar to taste. I personally prefer sweetened condensed milk and a touch more cinnamon.

Serve and enjoy.
