One of the highlights that has come out of staying home during COVID has been cooking. I didn’t realize how much we were eating out until restaurants were forced to stop indoor dining. Of course, we could always order takeout, but I enjoy the entire experience about dining out which includes sitting at the restaurant. So I found myself cooking more at home and experimenting with different recipes.
This is where my pineapple avocado salsa recipe comes in. We took to grilling last summer in an effort to get outside, and on one such occasion, were grilling fish. I whipped up this salsa to top the fish and was surprised by how much my husband enjoyed it.
Word to the wise–if your significant other ever scarfs down a recipe, save it!
Now that the weather is warming up again, I’m busting out my pineapple avocado salsa recipe to enjoy all summer. It goes well with fish, chicken, and even on its own. Pair it with a fancy drink and you’re all set for a tasty summer evening.
Pineapple Avocado Salsa
Serves 8
Ingredients
- 2 cups pineapple, diced
- 1-2 jalapeños, diced
- 1 large avocado, diced
- Half a red onion, diced
- Juice of 1-2 limes
- Salt, pepper, and cumin to taste
- Cilantro for garnish, optional
- Tortilla chips for serving
Instructions
- Dice the pineapple, jalapeños, avocado, and red onion and place in a bowl.
- Add in lime juice and salt, pepper, and cumin to taste.
- Let salsa sit in fridge for flavors to meld (about an hour) or until ready to serve.
- Serve with tortilla chips, crackers, or on top of fish or chicken.
This salsa will keep in the fridge for 1-2 days. The lime juice keeps the avocados from turning brown too quickly. Want to kick it up a notch? Try grilling your pineapple for a charred flavor. The beauty of this recipe is that you can really customize it to your liking. I’ve added bell peppers or mangoes to the mix when I’ve felt like changing it up.
