Arroz con Leche (Mexican Rice Pudding)

As winter approaches, I find myself gravitating towards warm, comforting foods. Soups and stews are winter staples, but I’m here to introduce you to a sweet alternative–Arroz con Leche.

Arroz con Leche is a comforting classic I make every winter. It is a sweet rice pudding made with milk and topped with cinnamon and raisins.

My mom would make this for me growing up, and it always takes me back to my childhood. I’ve made it my goal to continue the tradition and make it every winter for my family or, if I’m being honest, mostly me. My son is becoming a big fan of arroz con leche, though it might just be the raisins.

Arroz con leche will warm you up on even the coldest day.

Arroz con Leche

Yields 4 Cups

Ingredients

  • 1 cup long-grain, white rice
  • 4 cups water
  • 2 sticks of cinnamon
  • 1 cup whole milk
  • 12 oz. can evaporated milk
  • 14 oz. can sweetened condensed milk
  • Cinnamon and raisins for topping (optional)

Directions

  1. Bring water to a boil in a medium-size heavy pan. I prefer to use a non-stick pan.
  2. Add rice and cinnamon sticks. Cook until rice is tender, then drain.
  3. Return rice and cinnamon sticks to pot and add in whole milk, evaporated milk, and sweetened condensed milk. Bring to a boil then simmer until thick and creamy. About 30 minutes.
  4. Remove cinnamon sticks.
  5. Stir in raisins.
  6. Serve warm and top with cinnamon.

Aside from being tasty, this recipe will fill your kitchen with a subtle, sweet aroma and is sure to warm you up on those cold, winter nights. Enjoy!
