My Grandma’s Quick Vegetarian Casserole

My grandma was a military wife and her weekends would be busy with fundraising events. This casserole was always a favorite crowd pleaser. It was quick and easy and made with the simplest ingredients. It would also make a great weeknight dinner!

This is a great way to glam up boring baked beans. And the best part is you can make it your own by adding any meat or simply serve it as a vegetarian dish.

Quick Vegetarian Casserole

Ingredients:

1 large can of baked beans (make sure it’s vegetarian if you want a meat-free dish)
1 bag of frozen spinach
1 box of mac and cheese
shredded cheese

Instructions:

In an oven-safe dish or aluminum baking tray, pour in the baked beans. Microwave the frozen spinach according to instructions. Let it cool a bit and spoon it all over the dish.

Make mac and cheese according to the instructions on the box and spread it as the third layer.

Generously sprinkle shredded cheese and bake at 350º F for 20 minutes.

***If you choose to make this ahead and put it in the fridge, you can cover the top with aluminum foil loosely. Then bake it at 350º F for 45 min or till it bubbles. Broil it until the cheese becomes golden brown.
