Instant Pot Cashew Chicken Recipe

I’m always looking for a reason to use my Instant Pot, and this is one of my favorite recipes to make. It is quick, easy, and loved by everyone in the family (even my child who doesn’t like chicken). You can prepare everything beforehand and it only takes about 20 minutes to cook. 

Ingredients:

  • 1 lb chicken breast
  • 2 tbsp oil
  • 1 tsp minced garlic
  • Chopped vegetables of choice (I like to use bell peppers, green beans, and carrots)
  • ½ cup soy sauce or coconut aminos
  • ¼ cup water
  • 1 tbsp rice or white vinegar
  • 1 tsp brown sugar
  • 1 tsp hoisin sauce
  • ½-1 cup cashews
  • 1 cut green onion (optional)
  • Crushed red pepper flakes to taste (optional)
  • Rice or zucchini noodles (optional)

Directions:

  1. Cut the chicken into cubes. 
  2. Combine the soy sauce, water, vinegar, brown sugar, and hoisin sauce in a small bowl and set aside.
  3. Set the Instant Pot on sauté and add the oil.
  4. Saute the chicken until it is cooked on all sides. Add in the garlic and cook for an additional minute.
  5. Add in the vegetables and sauce mixture. Cover and set the Instant Pot to pressure cook for 8 minutes. 
  6. After the cooking cycle is complete and you have released the pressure, add in cashews and crushed red pepper.
  7. Serve over rice or zucchini noodles and top with cut green onion.
