Easy Sheet Pan Pancakes

One of my favorite easy, last-minute meals after a busy day is “breakfast for dinner.” Throw together some pancakes, bacon, and fruit, and everyone is happy. Pancakes are easy but kind of a pain to make. No matter how hard I try, my pancakes always come out resembling North America and less round. I started making these easy sheet pan pancakes, and I will never go back to traditional pancakes. This is so easy–you just bake and cut. That’s it! 

Easy Sheet Pan PancakesIngredients

Makes 8-10 servings, prep time 10 mins

  • 3 C flour
  • 2 tablespoons baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 1/2 C milk
  • 2 large eggs
  • 1 tablespoon vanilla
  • 8 tablespoons unsalted butter, melted
  • 1 C strawberries
  • 1/4 C chocolate chips

Instructions

Preheat oven to 425 degrees. Whisk together all dry ingredients and then combine all the wet ingredients. I admit to lazily throwing all the ingredients together in a stand mixer and that works well too. Spray half sheet pan (18 x13 in) with cooking spray and pour the pancake batter onto the baking sheet and spread evenly. Add strawberries and chocolate chips and place evenly over batter. Then bake for 15 minutes until a light golden brown. This comes out nice and fluffy, and you can switch up the toppings and dress with butter and warm syrup. So easy!
