Let’s Eat at Food Trucks!

In January I wrote about Five Albuquerque Food Trucks. I readily admit that the weather got cold, and life kind of took over, but I am finally back out there trying some food trucks! Social distancing measures are still in place, but I’m looking forward to being able to gather more frequently as restrictions ease. In the meantime, wear a mask and take a food tour! In the second installment of this series, I found five more food trucks to try throughout the Albuquerque area.

Biscuit Boy

While not “technically” a food truck, per se, Biscuit Boy is a food vendor that is currently offering his fluffy, southern-style biscuits at both the Railyards Market and at La Esquinita (a new concept marketplace, community hub, and incubator by the Barelas Coalition) on Saturdays and Sundays.

Make sure you get there early because he is guaranteed to sell out. I showed up late and wasn’t able to try the BEC (bacon, egg, and cheese), but lucky for me, it forced me to try his green chile biscuit with vegetarian gravy. (Yes! He offers vegetarian options!) The biscuit was tangy, fluffy, and decadent. The gravy paired perfectly with it. I had to stop myself from eating it all. Green chile lovers will crave this biscuit and gravy dish. I cannot wait to try more from this one.

Parker’s Pizza

Do you remember old-school pizza parlors with the red gingham table cloths and pitchers of beer or soda? You know, the ones with high-backed booths and a tiny arcade to play in? Though Parker’s Pizza lacks brick and mortar, they still transcend you to that pizza parlor. The pizza reminded me of exactly that. The menu consists of traditional personal-sized pizzas with any variety of toppings on the menu, mozzarella sticks, breadsticks, and much more.

They made me two pizzas which I took home for my son and husband to try. I had one slice and my husband ate the rest and asked me if I had brought more.

Kitsune

Kitsune is an Asian-inspired food truck bringing the flavorful interpretation of cuisine from China, Japan, Korea, and Southeast Asia. Their menu is diverse in flavor, but the concept is pretty simple. They have a main flavor/dish that you can choose, and it’s served via rice bowl or inside tacos. They also have some appetizers like blistered shishito peppers and green chile cheese potato croquettes they call Tanuki Balls.

My friend and I met up at La Cumbre on a Saturday and tried out the Bo Samm and KFC (meaning Korean Fried Chicken). We each had two tacos and both of us loved the dishes. The tacos packed a huge flavor punch and brought just enough salt, heat, fat, acid, and sweetness which is what I look for when I eat Asian-inspired street food.

Wing It Up

Showing my dedication to seeking out these food trucks, I left my quadrant to find Wing It Up. I drove the 25 minutes out to Marble Brewery Westside and placed a to-go order for some wings. I mean, who doesn’t love chicken wings?

Wing It Up has 10 flavors to choose from, and I wish I could have tried them all.

My 13 year old ate all 10 of his traditional wings with buffalo sauce, and I swear the kid didn’t breathe once while eating. My husband chose the dry rub bbq seasoned wings, which he said were really good and salty. I ate a few of the sweet red chile wings and I loved them! The wings were cooked perfectly. They even packaged up the food with the sauce for me to toss the wings at home since I told them when I ordered I’d be taking them all the way back home and they wanted to make sure the wings didn’t get soggy (extra points for that service!). I will be returning to try some more of their flavors for sure.

In addition to wings, they serve up onion rings, fries, and (I’m not even kidding) deep-fried Reese’s Peanut Butter Cups and Oreos.

The Pop Co.

The last food truck, The Pop Co, (err . . . they aren’t really a truck either but they are a food vendor without a brick and mortar shop, so that’s my definition and I’m sticking to it) make delicious cake pops, candied apples, chocolate-dipped cookies, and more!

I bought a variety of cake pops to try, and they were almost too pretty to bite into. Almost. My husband loved the pistachio flavor, I loved the lemon and pineapple, and the 13 year old and his friend devoured the vanilla and chocolate.

From their Instagram, it looks as though they take special orders but you need to make sure you order far in advance. They’ve already sold out for the entire month of May! I think these cake pops would be a great Father’s Day Gift or even something fun to bring to a summer BBQ.
